“Brat” Oyster

Our “Brat” oysters are a Bratislavan strain with great flavor and texture. They are some of the firmest, fleshiest oysters we have grown, and we prefer them to Pearl, Golden, Elm, and other Oyster varieties. They pair well with chicken, seafood, and rabbit, and are an ideal choice for braised dishes. Additionally, Oyster mushrooms contain natural statins and tumor-fighting chemicals.

Lion’s Mane

Our Lion’s Mane mushrooms are some of the most unique and flavorful we offer. In addition to their whimsical appearance, they have a very delicate, seafood flavor, and do well sauteed, in soups, or in cream sauces. Additionally, Lion’s Mane and other Hericium species contain chemicals which help with nerve regeneration and memory.

Shiitake

Shiitakes are one of the most frequently cultivated and consumed gourmet mushrooms. Aside from their rich, delicious flavor, they pair incredibly well with other mushrooms such as Lion's Mane and Oysters. Shiitakes also offer a solid boost to the immune system, and promote cardiovascular health. Additionally, Shiitakes are great dried and powdered to use as a seasoning for pretty much anything you can think of. We occasionally have fresh log-grown Shiitakes available; other growers in our area are more focused on log cultivation of these delicious mushrooms. Many larger commercial growers utilize sawdust or straw for indoor Shiitake production but we've found the fruits to pale in comparison to those grown on Oak logs.

King Oyster

Also called King Trumpet or Abalone Mushroom, the King Oyster is quite different from our Brat and other traditional Oyster mushrooms. It has a rich, complex, nutty flavor, an incredibly firm texture, and holds up well to aggressive cooking methods such as grilling. This mushroom is somewhat more intensive to cultivate than other species, so availability is not as consistent. However, these are worth watching out for...

Pearl Oyster

The Pearl Oyster is another variety of Pleurotus ostreatus, like our "Brat" Oysters. However in our experience, the Pearls have longer, tougher stems, and much thinner caps, and don't have the texture or flavor of the Brats. We occasionally offer Pearls for sale but the Brat is our mainstay for Oyster mushrooms. Pearl Oysters pair well with chicken, seafood, and rabbit, and are an ideal choice for braised dishes. Additionally, Oyster mushrooms contain natural statins and tumor-fighting chemicals.
